Fresh birch sap is a clear, almost colorless, water-like liquid with a neutral, slightly sweet taste.
Harvested in spring just before the appearance of young leaves, birch sap never ceases to seduce by its benefits.
BETWEEN THE HÉRAULT AND BRETAGNE, BETWEEN SEA AND OCEAN, IT IS A SMALL PART OF THE ARIÈGE THAT WE FIND AT THE SALON INTERNATIONAL DE L'AGRICULTURE, PORTE DE VERSAILLES IN PARIS
Wine, lemonades, foies gras, charcuterie, but also berets, soap, saffron and woollens coming straight from the Ariège mountains, 23 ambassadors of the Ariège followed one another on the departmental stand "Ariégez vous".
This Tuesday, February 26, at the invitation of the Departmental Council, we had the chance to meet some of these producers and craftsmen.
Interviews, tastings, a walk in the horse hall to see the merens, then the farm with its pigs, goats and sheep, the Gascon cows that parade on the ring and a little cuckoo to Monjeta, the casta coming from Betchat.
In total, nearly 6 km were covered in the largest farm in France, a tiring but exciting day.

Our team went to the small village of Lasserre to meet a company that harvests and markets the sap.
