BETWEEN THE HÉRAULT AND BRETAGNE, BETWEEN SEA AND OCEAN, IT IS A SMALL PART OF THE ARIÈGE THAT WE FIND AT THE SALON INTERNATIONAL DE L'AGRICULTURE, PORTE DE VERSAILLES IN PARIS

Wine, lemonades, foies gras, charcuterie, but also berets, soap, saffron and woollens coming straight from the Ariège mountains, 23 ambassadors of the Ariège followed one another on the departmental stand "Ariégez vous".

This Tuesday, February 26, at the invitation of the Departmental Council, we had the chance to meet some of these producers and craftsmen.

Interviews, tastings, a walk in the horse hall to see the merens, then the farm with its pigs, goats and sheep, the Gascon cows that parade on the ring and a little cuckoo to Monjeta, the casta coming from Betchat.

In total, nearly 6 km were covered in the largest farm in France, a tiring but exciting day.

"We start the month of March with a rather original subject! It is about birch sap, more and more known for its beneficial properties for the body, birch sap invades the market. Our team went to the small village of Lasserre to meet a company that harvests and markets the sap. We will follow Jean-Louis Savignol, who will show us how the work is done from beginning to end, from harvesting the sap in the forest to packaging.
