The benefits of birch sap

Also called birch water, its virtues have been known for centuries. Birch sap has been known in Europe since the Middle Ages. At that time it was the drink of apothecaries used in case of kidney stones. In the 12th century, Saint Hildegard of Bingen described birch sap as a cure to relieve ulcers.

The composition of the birch sap

The sap is a translucent liquid close to the taste of water and slightly sweet (0.5 to 2% of sugar) which contains two heterosides:
betuloside and monotropitoside supposed to release by enzymatic hydrolysis of methyl salicylate (analgesic, anti-inflammatory and diuretic)

The benefits of birch sap are due to its composition, which is almost unique in its natural state. Indeed, it contains most often and in variable quantities of proteins and amino acids (mainly isoleucine, valine, asparagine and glutamine). But also minerals such as calcium, potassium, magnesium, zinc, iron, copper and manganese as well as trace elements such as chromium, selenium, cobalt, gold, silicon, copper and lithium.

It also contains mucilage.
Mucilage is a plant substance, made up of polysaccharides, which swells on contact with water, taking on a viscous, sometimes sticky consistency, similar to gelatin.

Free amino acids were observed in the sap, among which glutamic acid.

Its composition in trace elements depends on the geological nature of the subsoil. It is therefore interesting to collect the sap on mineral-rich soils.
This is the case in the Regional Natural Park of the Ariege Pyrenees at the HARAS PICARD DU SANT.
The cure of Fresh Organic Birch Sap harvested in the woods of our organic breeding of Merens horses at an altitude of 560 m and in the Small Pyrenees at 1000 m, is recommended as a 3-week cure at the end of the winter to cleanse the body.
